gnu: python-pygmsh: Use pyproject-build-system.
* gnu/packages/simulation.scm (python-pygmsh)[build-system]: Switch to
PYPROJECT-BUILD-SYSTEM.
[arguments]: Remove redundant phases.
[native-inputs]: Remove PYTHON-PYPA-BUILD.
