gnu: python-covdefaults: Update to 2.3.0.
* gnu/packages/python-check.scm (python-covdefaults): Update to 2.3.0.
[build-system]: Use pyproject.
[arguments] <phases>: Use default 'check.
[propagated-inputs]: Add python-coverage.
[native-inputs]: Remove python-coverage; add python-setuptools.
